Carol Ofori shares one of her favourite mango recipes with us this Mango Day. Yes, there is such a day - why not?!
What is Mango Day?! Well, it's a day dedicated to the mango fruit. Yes, there is such a day and it is a thing, well, at least we are making it a thing. Because a fruit such as the mango should be celebrated.
It is enjoyed by many in a variety of ways. One of the popular ways that many Durbanites enjoy the fruit is in a pickled form, while some pluck it when it is green and enjoy it with a mix of chilli powder and salt. This may sound Greek to some, but we are all for trying out new things, so when the season comes, rest assured we will prepare some for Carol Ofori.
Did you know that mangoes were first cultivated in India more than 4,000 years ago? Also, there are more than 500 varieties of mangoes in the world, National Today informs us.

Carol Ofori loves mangoes so we thought it only fair to ask her for her favourite mango recipe and, of course, in true 'Mama Cooks' style, she shared her favourite mango salad recipe with us.
Lettuce, Avocado, and Mango Salad
This salad only takes 10 minutes to prepare and it serves four, so it's great for a snack time treat.
Ingredients:
- 1 green oak lettuce torn into pieces (or you could use your preferred lettuce, ice berg works just as well)
- 1 large Avocado, diced
- 1 large Mango, diced
- 2 tbsp of sliced Almonds
- 2 tbsp Dried Cranberries
- 1 tbsp Olive Oil
- 1 tbsp White Vinegar (if vinegar is too harsh for you, you can substitute with some a squeeze of orange juice, this compliments the Avocado)
Method:
- Mix the lettuce, avocado, mango, and cranberries together in a bowl.
- Whisk the oil and vinegar together in a small bowl or jug and add some salt and pepper. Carol also adds a pinch of chilli powder for a small zing.
- Pour this mixture over the lettuce mixture and toss.
- Voila! All ready to eat...
