Nothing beats the taste of delicious Koeksisters. Whether you eat them on their own or with a stick of cinnamon, koeksisters are pure bliss.
But of course, like any great dish or treat, the secret lies in the recipe.
Below is a divine koeksister recipe that will tantalise your taste buds.
Note: Please make sure you make the sugar syrup the day before. The colder it is, the better!
Ingredients:
1.25kg sugar
3 cups of water
560g cake flour
5ml salt
50ml baking powder
Grated 30ml ice-cold butter
375ml milk
One egg
40 ml lemon juice
Sunflower oil for frying
Pour sugar and water into a saucepan and bring to the boil. Stir until the sugar melts. Add lemon juice and simmer for 10 minutes.
Place it in the fridge overnight.
Dough recipe:
Add salt and baking powder to the flour and sift.
Once it is sifted, add the grated butter. Mix thoroughly.
Pour milk into a bowl and add egg, then whisk.
Make a well in the center of the flour mixture and stir in the liquid.
Mix the mixture thoroughly until the dough comes together.
Flour a surface.
Work the dough until it is firm.
Leave it to rest for 30 minutes.
Roll out the dough on a lightly-floured surface to thickness of 1cm.
Cut the dough into rectangles of 6 x 15 cm. Cut each rectangle length-ways into three strips, leaving one side uncut. Plait the three strips and press the cut ends together firmly.
Deep fry until they are golden.
Remove from oil and drain them on paper towels for a few seconds.
Dip into sugar syrup while they are still hot until they are thoroughly coated.
